The 8,000 VND “Hunger-Saving” Noodle Soup of Nha Trang That Has Defied Inflation for Over Six Years

by BusinessMagazine

In the heart of Nha Trang, Khanh Hoa Province, two banh canh (thick noodle soup) stalls known affectionately as the “hunger-saving eateries” continue to serve steaming bowls for just 8,000 VND (about 30 US cents). Over decades, they have remained familiar haunts for generations of students, youths, and working-class patrons.

At 90 Nguyen Huu Huan Street, the “hunger-saving” stall of Co Hai sees an unbroken stream of patrons. Operating from 11:00 AM to around 5:00 PM, groups of school pupils and university students drop by, order piping-hot bowls, and quickly clear their seats to make room for those waiting behind them.

The dining area holds only a few modest tables and plastic chairs, yet it is perpetually lively with friendly chatter. Patrons arrive from all walks of life, though students still account for the vast majority.

The establishment is carried on by the family of 44-year-old Tran Van Hien. After changing locations several times, the shop settled at 90 Nguyen Huu Huan in 2019 and has operated steadily ever since.

Though opening hours run from 11:00 AM to roughly 5:30 PM, the broth and noodles often sell out well before closing. For many, this tiny eatery is far more than a cheap lunch stop—it is inextricably bound to the nostalgic memories of their formative school days.

According to Hien, his mother, Nguyen Thi Dieu (popularly known as Co Hai), stood by the boiling pots for 32 years. In 2020, as the COVID-19 pandemic took hold and his elderly parents stepped back due to advancing age, Hien took over the reigns to preserve the family legacy.

In its earliest days, a bowl sold for merely 200 to 300 VND. Over the decades, prices gradually shifted to 500 VND, 1,000 VND, 2,000 VND, 5,000 VND, and now sit at 8,000 VND per portion.

This 8,000-VND price tag has been steadfastly maintained by Hien’s family since 2020.

Despite charging pocket-change prices, Hien shares that the earnings remain sufficient to sustain his household and raise his three children, who are currently attending 12th, 8th, and 3rd grades.

The stall serves a single, focused dish: banh canh noodles offered in two varieties—chewy tapioca strands and soft rice strands. The noodles are custom-ordered directly from local workshops, while Hien personally sources fresh fish to make the fish cakes from scratch.

Without investing in lavish decor or expanding the menu, the family pours all their care into safeguarding the familiar taste and preparation methods refined over decades.

The moniker “hunger-saving noodle soup” (bánh canh cứu đói) was bestowed upon the shop by grateful early diners. Back when they were struggling students or wage laborers, many sought out this corner simply because a bowl was both satisfyingly delicious and kind to an empty wallet.

“The greatest joy is seeing patrons who ate here as young kids, now with families of their own, still dropping by every single time they return to Nha Trang,” Hien reflected.

Not far away, at the corner of Ngo Duc Ke and Nguyen Huu Huan, another “hunger-saving” stall run by Co Son also keeps the exact same price of 8,000 VND per bowl.

According to Son, when she first started decades ago, each serving cost barely 200 VND. Because the small-scale stall prepares a limited quantity each day, profit margins are slim, yet her family has faithfully kept the fire burning for over thirty years.

After three decades, the stall commands a steady and loyal following despite its tight quarters. Co Son endears herself to customers with her constant smiles, cheerful banter, and innate warmth.

Regular patrons often tease that the landlady “simply refuses to raise prices.” After keeping the fee at 5,000 VND for almost a decade, she moved it to 7,000 VND, and only recently adjusted it to 8,000 VND.

Her banh canh also comes in both rice and tapioca noodle choices. The broth is simmered purely from fish bones, yielding a light, naturally sweet clarity. Each bowl is accompanied by fried fish cakes and standard condiments like seasoned fish sauce, fresh lime, and chili.

Alongside the soup, diners can order baguettes or extra steamed fish cakes in small bowls. Given the humble 8,000-VND pricing, many long-time regulars readily polish off two, three, or more bowls in one sitting.

Opening daily around 11:00 AM, the stockpot is typically scraped clean by 4:00 PM.

With no towering signs, no air-conditioned interiors, and no elaborate recipes, these two “hunger-saving” stalls quietly endure in the heart of Nha Trang on a remarkably simple formula: comfort food, pocket-friendly prices, and uncompromised flavors sustained across generations.

For Nha Trang locals, especially students, an 8,000-VND bowl of banh canh is not just a quick midday meal—it is an evocative reminder of school-gate memories, shared laughter over wooden benches, and an unpretentious corner of coastal Nha Trang that has stood the test of time for more than 30 years.
